Tortelloni con Ripieno di Ricotta e Spinaci
TORTELLONI CON RIPIENO DI RICOTTA E SPINACI (per 6 persone)
INGREDIENTI PER LA PASTA
300gr di farina
3 uova
INGREDIENTI PER IL RIPIENO
150gr di spinaci (o bietole) cotti
300 gr di ricotta della Coop. Casearia Castelnovese
1 uovo
50 gr di Parmigiano Reggiano della Coop. Casearia Castelnovese
Sale e pepe
PREPARAZIONE DELLA SFOGLIA
Su un piano di lavoro disporre la farina a fontana e inserirvi le uova. Amalgamare il tutto e impastare fino a ottenere un impasto morbido e liscio. Lasciare riposare.
PREPARAZIONE DEL RIPIENO
Tritare gli spinaci cotti insieme alla ricotta e mettere il trito in una casseruola. Aggiungere l’uovo e il Parmigiano Reggiano grattugiato unitamente a un pizzico di sale e di pepe.
PREPARAZIONE DEI TORTELLI
Stendere la sfoglia fino a uno spessore di circa 2 mm e tagliare dei quadrati di circa 6x6cm. Inserire una noce piena di ripieno all’interno di ogni quadrato e chiudere i bordi conferendo la tradizionale forma del tortellone (vedi video). Continuare fino a esaurimento di pasta e ripieno e mettere su un vassoio cosparso di farina. Immergere i tortelloni in una pentola d’acqua salata bollente e lasciarli cuocere fino a quando non riemergono in superficie. Scolare e condire con burro e salvia o panna unitamente al Parmigiano Reggiano grattugiato.

150gr boiled spinach (or chards)
300gr of ricotta cheese from Coop. Casearia Castelnovese
1 egg
50 gr Parmigiano Reggiano from Coop. Casearia Castelnovese

INSTRUCTIONS FOR THE DOUGH
Put the flour on a flat work surface and make a whole in it. Put the eggs in it and knead thoroughly to make a smooth and soft dough. Leave to rest.
INSTRUCTIONS FOR THE FILLING
Mix the spinach and the ricotta cheese in a mixer and after blending, put them in a saucepan. Add the egg and the grated Parmigiano Reggiano and while mixing them together season with a pinch of salt and black pepper.
INSTRUCTIONS FOR TORTELLONI
Roll up the dough on a flat work plane until you dough sheet is about 2 mm thick. Trim as many 6x6cm squares as you can and put a knob of filling mixture in the middle of each square. Seal the edges in the traditional way (See video) so to give them the shape of tortelloni. Employ all squares and the mixture for the filling and lay them on a tray covered with flour.
Bring to boil abundant salted water and plunge tortelloni in it. Boil them until they come to the water surface and drain soon after. Season with butter and sage or cream and sprinkle with Parmigiano Reggiano.
