Tortellini in Brodo di Carne
Tortellini in brodo di carne … per il pranzo di Pasqua con tutta la famiglia!
(Ricetta di Anna, cuoca e nonna modenese)
Con queste dosi si ottengono circa 2 kg di tortellini!
Ingredienti per la PASTA FOGLIA
(indicazione di base: utilizzare n.1 uovo medio per ogni 100gr di farina)
10 uova medie
1 kg farina di semola di grano duro
Ingredienti per 1 kg di PESTO di tortellini
200gr prosciutto crudo magro
50gr mortadella
600gr filone di maiale
150gr Parmigiano Reggiano invecchiato 36 mesi
2 uova medie
Noce moscata q.b.
1 pizzico di sale
1 noce di burro
Ingredienti per il BRODO di carne
5 litri acqua
200gr doppione di manzo
200gr punta di petto di manzo
1 osso di manzo
1/4 di cappone
1 cipolla piccola
1 carota
1 gambo di sedano
1 piccolo mazzo di prezzemolo
1 foglia di alloro
3 spicchi d’aglio
1 pugno di sale
Preparazione del pesto
Tritate la carne di maiale in modo grossolano. In una pentola fate sciogliere una noce di burro quindi aggiungetevi la carne di maiale e 1 pizzico di sale. Fate cuocere leggermente per 5 minuti.
Lasciate raffreddare.
Nel frattempo tritate il prosciutto crudo e la mortadella. Quando la carne di maiale si sarà raffreddata, unitela al prosciutto e alla mortadella tritati e ri-tritate tutto finemente, in modo da farle amalgamare perfettamente. Mettete l’impasto macinato in una ciotola capiente e unite il Parmigiano Reggiano, l’uovo, la noce moscata. Miscelate il tutto in modo uniforme e lasciate riposare in frigorifero per circa 2 ore.
Preparazione della pasta sfoglia
Su un piano di lavoro di legno versate la farina creando una fontana. Rompetevi dentro le uova e amalgamate tutto insieme, prima con una forchetta e poi con le mani. Quando avrete ottenuto un impasto omogeno e liscio, avvolgetelo in una pellicola da cucina.
Lasciate riposare in frigorifero per circa 2 ore.
Preparazione dei tortellini
Tagliate una porzione di pasta sfoglia (un panetto di circa 15cmx 3cm spesso 2 cm).
Avvolgere il resto della pasta in una pellicola di carta trasparente per evitare che si secchi.
Passate il panetto nella macchina per la sfoglia.
1° Passaggio: regolare la macchina al tasto 0 (il più largo).
Otterrete una striscia allungata. Tagliatela in due. Avvolgete una parte in una pellicola di carta trasparente.
Prendete l’altra parte e passatela nella macchina da sfoglia.
2° passaggio: regolare la macchina sul tasto 3 (quello intermedio).
3° passaggio: regolare la macchina sul tasto 6 (quello più stretto).
Otterrete una striscia di pasta alta circa 12 cm e lunga circa 70cm.
Con una rondella da cucina, create tante strisce orizzontali alte circa 4 cm. Poi tagliate in verticale per ottenere dei quadrati di lato 4cm x 4cm circa.
Ponete al centro di ogni quadrato di pasta una piccola noce di impasto e procedete immediatamente alla chiusura per evitare che la pasta si secchi.
Per chiudere il tortellino, sovrapponete i lembi esterni andando a formare un triangolo e poi fate ruotare il centro del triangolo sul dito indice unendo le due estremità e arrotolando leggermente la punta del triangolo. (Vedi il VIDEO).
Una volta chiuso il tortellino si consiglia di metterlo su una rete per la pasta fresca, in modo tale da fare asciugare bene la stessa sia sopra che sotto ed evitare così che si attacchi al vassoio.
Preparazione del brodo di carne
In una pentola molto profonda, mettete a cuocere la carne in 5 litri d’acqua. Prima che l’acqua arrivi a bollore, togliere la schiuma e abbassare la fiamma.
Immergere le verdure nel brodo, aggiungere un pungo di sale e riportare a bollore.
Lasciare a cuocere a fuoco lento per circa 3 ore.
Scolare e filtrare il brodo dai pezzi di carne.
Per cuocere i tortellini, portate il brodo a ebollizione. Immergetevi i tortellini e quando saliranno in superficie, spegnere il fuoco e serviteli immediatamente con una spolverata di Parmigiano Reggiano.
Tortellini in beef stock for the Eastern lunch with a typical family

These quantities are meant for 2 kg of tortellini.
Ingredients for the DOUGH
(1 egg for 100gr flour)
10 medium sized eggs
1 kg durum wheat flour
Ingredients for 1 kg of FILLING
200gr lean Parma ham
50gr mortadella
600gr pork fillet
150gr Parmesan cheese seasoned 36 months
2 medium sized eggs
nutmeg to taste
1 pinch of salt
1 knot of butter
Ingredients for the meat STOCK
5 l water
200gr beef flank
200gr beef brisket
1/4 capon
1 beef ossobuco
1 small onion
1 carrot
1 celery stem
1 small bunch of parsley
1 bay leaf
3 garlic cloves
1 handful of salt
Preparation of the FILLING
Grind the pork meat roughly. In a saucepan, melt a knot of butter and add the ground meat with a pinch of salt. Cook it slightly for just 5 minutes then allow it to cool down.
Mince the Parma ham and the mortadella and add them to the cooled ground pork meat. Mince them together finely, so to obtain a homogenous mixture. Put the mixed compound inside a bowl and add the Parmesan cheese, 1 egg and some nutmeg. Blend them smoothly and store the filling in the fridge for about 2 hours.
Preparation of the DOUGH
On a wooden board, pour the flour and in the middle of it break the eggs and stir them with the flour. At first with a fork and then by hand, until a smooth and compact dough is obtained. Wrap it in a cling film and store in the fridge for 2 hours.
Preparation of TORTELLINI
Cut off a section of dough (15cm x 3cm and 2 cm thick).
Wrap the rest of the dough in the cling film to prevent it from drying.
Feed the pasta maker with the dough.
1st feed: set the machine in the position “0” (the thickest)
A long sheet of dough will come out. Cut it in two halves. Wrap one in the cling film and use the second one
2nd feed: Set the machine in the position “3” (halfway).
3rd feed: set the machine in the position “6” (the thinnest) so to obtain a longer and thinner sheet of dough, 70cm long and 12 cm high.
Use a dough cutting wheel to cut the sheet in horizontal stripes as high as 4 cm. Then cut the sheet vertically, so to have as many 4x4cm squares as possible.
In the middle of each square, lay a little knob of filling and fold the square to form a triangle. With the fingers press on the edge s to seal the triangle and turn it around your index finger, so to give it the traditional shape of tortellini. (See VIDEO).
Repeat the same procedure for all pieces of dough sheets.
As soon as you seal each tortellini, lay them on a mesh tray, so to allow them to dry homogenously on both sides, and avoid sticking.
Preparation of the meat STOCK
In a large and deep sauce pan, put the meat in 5 litres of water. Before bringing t it to the boil, remove the foam from the surface and lower the heat.
Add all entire vegetables and the salt and bring it back to the boil.
Boil it on low heat for about three hours without a lid.
Drain it into another saucepan, and use a colander to filter the all pieces of meat.
Plunge the tortellini in the meat stock and bring it to the boil. As soon as the tortellini come to the surface, turn heat off. Serve it the immediately with a tasty sprinkle of Parmesan cheese.
