Risotto ai Frutti di Mare

RISOTTO AI FRUTTI DI MARE
Ingredienti

Cozze 1 kg
Vongole 1 kg
Calamari già puliti 400 gr
Gamberi 350 gr di code sgusciate
Filetti di acciuga 2
Gamberoni interi per decorazione 4
Prezzemolo 1 ciuffo
Aglio 2 spicchi
Vino bianco 1 bicchiere
Brodo di pesce un paio di mestoli
Riso carnaroli 320 gr
Olio extravergine d'oliva q.b.
Cipolle cipollotto 1
Sedano costa 1
Carote 1
Passato di pomodoro 180 gr 
Peperoncino 1 facoltativo
Pepe q.b.
Sale q.b.

PREPARAZIONE
Pulire le vongole scartando quelle rotte e mettetele a mollo in una bacinella piena d'acqua fredda, almeno per un paio d’ore.
Pulite le cozze, strofinandole con una retina di acciaio sotto l'acqua corrente.
Eviscerate, spellate e lavate i calamari sotto l’acqua corrente poi tagliateli ad anelli, quindi passare alle code di gambero che devono essere private della corazza. Pulite i gamberoni lasciandoli interi, serviranno per guarnire il piatto.
Passate quindi alla cottura delle vongole e delle cozze. Prendete due casseruole capienti, in una versate le vongole e nell'altra le cozze. Copritele con un coperchio e fate cuocere a fuoco vivo fino a quando tutte le conchiglie non si saranno aperte. Quando le vongole e le cozze si saranno dischiuse, spegnete il fuoco, filtrate l’acqua con un colino e tenetela da parte. Sgusciate cozze e vongole, tenendo da parte qualche vongola e qualche cozza intera che servirà per la guarnizione finale del risotto.
Preparate un battuto con il sedano e la carota e fatelo soffriggere insieme all'aglio (intero da eliminare successivamente) e al peperoncino, aggiungete i filetti di acciuga, mescolate facendole sciogliere, a questo punto sfumate con mezzo bicchiere di vino bianco, aggiungete il pomodoro lasciate sobbollire per 5 minuti, aggiungere quindi i calamari e fate cuocere fino a quando saranno diventati teneri. Proseguite la cottura aggiungendo il liquido filtrato dei molluschi ed il riso. Scaldate il brodo di pesce e fatevi cuocere i gamberoni che unirete al riso al momento dell’impiatto. Aggiungete le code di gamberi, se necessario aggiungete un paio di mestoli di brodo di pesce unite le cozze e le vongole sgusciate. Terminate con tutti gli ingredienti la cottura del riso e spegnete il fuoco. Lasciate riposare il riso per un paio di minuti e se vi piace spolverizzate il risotto ai frutti di mare con una manciata di prezzemolo tritato. Servite il risotto ai frutti di mare guarnendo il piatto con i gamberoni e le cozze e le vongole intere che avrete tenuto da parte.



SEAFOOD RISOTTO
Ingredients

1 kg of cleaned mussels

1 kg of cleaned clams

400 gr of cleaned squids

A spring of parsley

2 cloves of garlic

1 glass of white wine

2 cups of fish stock

Riso “Carnaroli” 320 gr

Extra-virgin olive oil

Onion or spring onion

1 chili pepper (optional)

Black pepper

Salt

350 gr of shelled shrimp tails

1 stem of celery

1 carrot

Tomato sauce 180 gr

Anchovy fillet    2

Prawns for garnish

 

INSTRUCTIONS

Clean the clams, discard any with a broken shell and soak them in a bowl of cool water for 2 hours.

Clean the mussels, scrub them with a steel brush and rinse them under running water.

Disembowel, peel and wash the squids under running water and cut them into rings.

Remove the shell from the shrimps tails.

Clean the prawns and boil them in the fish stock. They will be used to garnish the final dish.

Cook the clams and the mussels.

Employ 2 large pans: one for the clams and one for the mussels. Cover both with a lid and cook over high heat until all shells are open. Drain water and put it aside. Remove shells from all clams and mussels, saving some for the final garnish. Mince celery and carrot and sauté the mixture together with garlic (remember to remove it when it turns gold), chili pepper, anchovy fillet and make them melt. Add a glass of white wine and when it evaporates, add tomato sauce and allow it boil for 5 minutes. Add squids and cook them until they become tender. Add the water you have saved from the cooking of clams and mussels and put the shrimp tails in it. If necessary, pour some fish stock before adding the clams and the mussels already shelled. Finish the cooking of the rice along with all ingredients and remove from the heat. Allow it to cool for two minutes and sprinkle it with some parsley.
Garnish the dish with shrimps, clams and mussels you have saved apart and serve it straight away.
